Default Canon EF & EF-S lenses

What are canon EF-S lenses? What is the difference between EF-S & EF lenses?
Are EF-S optimized for digital cameras, to take into account the 1.6x
conversion factor on small-framed sensors?

Not just optimized, but there's a mechanical difference such that EF-S can't
be mounted on EF-only bodies (at least not without modifying the lens
mount). EF lenses can be used on both EF & EF-S mount cameras.

It may be also that the EF-S is optimized for the manufacturer, the
optics are cheaper to build for smaller "negative".

I am not particularly pleased of the fact that Canon has different
lens/bodytypes that can't be used mixed.

All EF lenses can be used on all EOS bodies. EF-S lenses can be used
only on bodies with APS-C size sensor. If you want maximum
compatibility, just don't buy the EF-S lenses. The L lenses are all
EF mount, so you won't be sacrificing any quality.

If you didn't damage the mirror before an image was produced. The rear
element of the EF-S lenses protrudes into the mirror box more than the
standard EF lenses do, thus precluding them from being used on FF bodies.
The rear element casing can be filed down (!) to clear the smaller mirror of
the earlier 1.6x crop cameras, apparently, but probably not the much larger
mirror of the 5D/1D/1Ds.

But what do you substitute the 10-22 EF-S or 17-85 IS EF-S with?

The 10-22 with a 1.6x crop is better in the corners than the 16-35L on a
FF. The 28-135 IS not a stellar lens; it's only quality is its IS.

Actual you can cut the mirror down on the 5D and 1D. This is done to
allow it to use the great Leica WA's. No one would bother to do this
to use an EF-S lenses but for a Leica it's worth it.

Ewww, that would make me really nervous. And what would it do to the image
in the viewfinder? I'm not sure any lens is worth sacrificing ability to
compose an image...

The 17-85 and 28-135 are roughly on the same level, optically, from all
reports. And the 16-35 stopped down to the f3.5 that the 10-22 starts at
starts to look a little better in the corners. And the 10-22 really sucks
at f2.8... ;-)

If a smaller mirror is needed, why not just use non-reflective tape
instead of dremelling the thing?
