I'd choose between the two systems, not the two cameras.

The D200 is a "better" camera than the 20D, in absolute terms, but whatever
Canon releases next will probably be better still. In any case, you'll have
the lenses a lot longer than the camera, so that's the important decision
between the two. And you'll take the same pictures with either one.

Since you're already in the Nikon camp, it makes sense to stay there, but if
you are just lusting after the latest greatest, and you don't already have a
whole slew of Nikon lenses, Canon does come out with the "latest greatest"
more frequently than Nikon. The D200, on the other hand, appears to be a
very robust camera, and could serve you for many years, until they've
doubled or tripled the resolution in DSLRs, and then you could upgrade
again.

All that's lacking right now is the sealing, the 20D has a magnesium alloy
body structure.
